As a self-proclaimed Anglophile, I just had to get that out there. I’ve been obsessed with all things British, long before the movie, V for Vendetta, came out and everybody else in the world knew about Guy Fawkes. My husband can attest for my obsession, since I always manage to inject “this one time in London…” into my daily conversations. (I studied abroad at King’s College London summer of 2005.)
Anyway…day #5: I am thankful for my education. Sure, I am working a job outside of my field, but I owe my world view and passion for learning to my college experience. Plus, it enabled me to study in London, my favorite city. PS: I love the Jesuits. 🙂
Speaking of my adoration of the Brits, Skyfall comes out this weekend. Yay! I’ve never really been into these movies (need to go back and watch the earlier ones), but I love Daniel Craig as James Bond. Pretty sure a movie trip is on the agenda for this Saturday (yes, I plan my weekends on Monday—shameful).
Today’s recipe is not British—but it will provide energy for a long day at work.
Energy Bites w/ Dates, Walnuts, Almonds, & Coconut
(makes around 24 balls)
Ingredients
- 1 cup pitted dates (I soaked mine, since they were a little dry)
- ½ cup raw almonds
- ½ cup raw walnuts
- ¼ cup raw pepitas
- ¼ cup mixed dried cranberries & goji berries
- ¼ cup flaked, unsweetened coconut
- dash salt
- 1-2 tsp coconut oil
Directions
- In a food processor, grind nuts until finely ground (but not into a powder)
- Add chopped dates and process till combined (it will be crumbly but should stick when pressed together)
- Add salt to taste, dried berries, coconut, and coconut oil (this can be left out, but my mixture seemed a little dry)
- Mix to incorporate
- Shape into miniature balls & refrigerate
I like these straight out of the refrigerator. They should keep in the fridge for at least a week & can probably be frozen.
