Happy Saturday! This week went by slowly, but luckily it ended well with our office Thanksgiving potluck. I’ve missed having these for the last few years, so we were all really excited about it this time around.
For my dish, I contributed this Italian Lentil Salad from Giada. It’s light, fresh, and vegan, actually, so I thought a true vegetable dish would break up the heaviness of the ham, sausage rolls, sweet potato casserole, potato salad, cake, pie, etc. That’s it on the right, second from bottom.
Since the husband is out of town supervising a fraternity event, today is a much-needed outing with my mother. After going to the visitation/wake of my childhood church’s former music minister (not how I typically begin my weekend outings), we’re going to lunch and to see Breaking Dawn, part II. My mother is a bigger bookworm than I am, so naturally she read the books after I did. We saw the last movie together (I’m sure Mark and my dad thank us for that).
I almost forgot. For day #15, I am thankful for my newfound love of cooking, since it’s led me to make healthier choices. For day #16, I’m thankful for the friendships I’ve made at work. And for day #17, I’m thankful for the “me time” and the “mother-daughter” time I have to unwind and have some time to myself.
