Unlike Monday, where the agony of returning to work after a long holiday nearly suffocated me, today I woke up really happy. I slept well, there’s a Christmas tree in my living room, gymnastics is tonight, and… it’s hump day. I’ve awakened from the post-turkey coma and the weekend is quickly approaching. Hooray!
The only bad part is the emptiness of my pantry and lack of inspiration in my meals. We finally cleaned out what little remained of our leftovers, and now our fridge is EMPTY. I’m craving green veggies like whoa, but our fridge/freezer is severely lacking in the greens department.
Dinner last night was yet another couscous creation; I’m sensing a pattern here (and here). I roasted a buttercup squash (first time—will definitely buy again!) with some coconut oil, salt, black pepper, and a pinch of cayenne. To the couscous, I added steamed edamame (green! woot!), dried cranberries, a smidge of butter, and a dressing made with strawberry balsamic and olive oil. The meal was surprisingly satisfying, though the couscous needed a little somethin’ somethin’.
And here’s what I ate today.
Breakast: Toasted honey wheat English muffin with apricot jam and pecan butter.
Midmorning: Piping hot Chai to warm up!
Lunch: Leftover squash/couscous from last night and a Fuji apple
Afternoon snack: Chobani and maybe a piece of World’s Finest Chocolate
Dinner: Our classic tomato and white bean soup with grilled cheese (recycled photo)
Staying committed to my month of thankfulness, for #24: I’m thankful for being able to sleep late in a warm bed (seriously, this Thanksgiving could be called “sleepsgiving”). #25: Quality entertainment (yeah, I’m superficial, but Homeland is beyond amazing and makes me actually look forward to—rather than dread—Sunday nights). #26: To have returned to work with no crises waiting for me (the therapist husband can never say the same!). #27: Knowing my pantry and fridge are never truly empty. #28: For gymnastics and the amazing childhood I had because of it.

Whoah, PECAN butter? I shouldn’t be surprised by that considering how many nut butters are out there now, but somehow I’ve never heard of that one!
