Just like that, we’re half-way through the second week of 2013; if you’ve made any resolutions, how are they working out for you?
Me? Well, uh…
Let’s start with my health-related goals:
1) My gymnastics class started back tonight. Although I’m feeling infinitely better than I did a few days ago, I took it easy since I haven’t tumbled since before Christmas. I did, however, twist my ankle, so I guess I’ll take it slowly next week, too. I do know that continuing this class is a resolution I’ll have no trouble keeping.
2) As for exercising regularly—I’ve failed. Whether this is an excuse (I’m so adept at making them) or true justification, I just haven’t felt well enough to do much of anything. I still have a bit of a cough, so getting out of breath isn’t quite on the agenda yet. I did start walking again during my lunch breaks, so that counts for something, right?
3) Since neither Mark nor I has had much of an appetite, I haven’t done much cooking—healthy or not. There’s plenty of time to develop recipes and peruse my cookbook, though.
Moving on to professional goals:
1) I’m trying to have a positive attitude at work. While I had one of my “moments” Monday morning, the last 2 days have gone well. Also, I found out today that I’ll probably go through some training to do sales orders (as back-up) since there was no one around to handle AOG requests from our customer during the week of Christmas. I’m always open to learning new skills and increasing my “value” as an employee.
2) I haven’t had the opportunity to search for any freelance work, but I have been brainstorming new ideas for foodiEcology. Again, plenty of time for this.
Last but not least, personal goals:
1) Being back at work and still feeling under the weather, I haven’t had the opportunity to look for volunteer work. I did, however, receive an e-mail from my Alma Mater yesterday about a local “Alumni Day of Service.” Perhaps the husband and I can participate in this event—although, as I re-read the invitation, I can’t help but notice the use of “first annual” instead of “inaugural.” I guess the e-mail author can see the future?
2) I may be successful next month in experiencing something new. Mark and I are waiting for our leave requests to be approved, but we’re likely going to Disney World for my birthday/Mardi Gras! I’m so excited. Another couple we’re friends with and their family are going to Orlando for an entire week in February. We’ve decided to join them for a few days after visiting Mark’s grandmother and uncle in Clearwater. While Mark has been to Disney World a couple of times—and I’ve technically been, though I was only 3 years old and have no memories—we’ve never been as a couple.
Any readers out there who’ve been to Disney World lately, do you have any suggestions of things I must see and do? We’re planning one day in the Magic Kingdom, one day at Epcot, and the last day at Universal Studios. Yay! 🙂
Before I get too excited, it’s time to move on to the food.
My eats from this past week are, yet again, uninspired. The meals featured are not from one particular day; rather, they are a random collection of whatever I managed to photograph.
Breakfast: Giant mug of coffee and overnight oats with banana and Sunbutter
Lunch: Peanut butter sandwich, dehydrated okra, and Chobani
Snacks: Maple-cinnamon nut clusters, hot tea, apple, and king cake à la mode (king cake topped with seasonal king cake ice cream; terribly unhealthy, but terribly delicious!)
Dinner: Baked portobello mushroom with cinnamon-pear balsamic vinegar and cambazola cheese (odd, but tasty) and corn
Hopefully next week I’ll prepare more exciting meals–and consume many more veggies!
