I have to admit that tonight’s post almost didn’t happen. I’m tired! I had a great workout at gymnastics tonight, thanks to being the only person in class for a good 15 minutes.
Yesterday I completed a 1.5 mile run! My previous run (1 mile) was last Tuesday (yes, I slacked off Thursday and Saturday), so I was quite proud to have increased the distance. I felt like I could’ve made it to 1.75 miles, or maybe even 2. For now, I’ll just aim for a repeat 1.5 run tomorrow.
Thanks to a bigger workload at work, the last couple weeks have flown by. It’s already hump day, so that means another What I Ate Wednesday!
Breakfast:
Oat bran with cinnamon, dried cranberries, walnuts, and a new—AMAZING—addition, Biscoff Spread (aka cookie butter). I’ve had a nearly-full jar of the stuff for a while now, unsure of how to use it. It adds the perfect amount of sweetness and creaminess to my morning staple.
Lunch:
What our cleaning lady ever-so-kindly referred to as “rabbit food.” Call it what you want, but this protein-packed salad was a satiating, delicious lunch that included baby spinach, carrots, mushrooms, hard-boiled egg, pumpkin seeds, hemp seeds, goji berries, and a homemade dressing of red wine vinegar, dijon, and olive oil. Whose bunny eats that?…
Dinner:
The best sandwich on Earth: the Mixed Grill from Mediterranean Sandwich Company. If lunch was heavy on the veggies, then dinner was heavy on the meat. The husband tagged along at the gym tonight (to watch) so we drove through downtown on our way home to satisfy our sandwich craving.
I can’t believe tomorrow is the last day of February! March is one of my favorite months, so I’m definitely looking forward to it. Till next time…
