Not only is it one of my favorite days, but it’s the first official day of spring! I’m sure all you northerners are rejoicing toward the heavens, but around these parts (said in a most exaggerated southern accent), the azaleas are in bloom, the birds are singing, and my car is coated with a thick layer of yellow pollen! It’s been a mild winter along the Gulf Coast, but I’m still excited for the abundance of fresh produce spring always supplies.
Some things I’m especially looking forward to:
- local strawberries
- fresh blueberries
- tasting this brand new beer from Abita
- the remainder of crawfish season
- stocking up on Cadbury mini eggs
- festival season (attending this one, hopefully)
- re-planting our own garden
- taking part in the 2K fun run at this weekend’s Azalea Trail Run (!!!)
Before I know it, it’s going to be hot, so I want to take advantage of the next couple months’ mild weather and ample sunlight by running (and working my way up to that 5K distance), biking with Mark, playing outside with our sweet Iggy, and working in the yard. Hopefully a few beach days and a trip to the outlet mall are thrown in there, too, before the sweltering heat and humidity turn me into a hermit!
Here’s my What I Ate Wednesday roundup.
Breakfast: an old favorite, overnight oats, which included Greek yogurt, flaked coconut, slivered almonds, a mix of dried and frozen blueberries, and about a teaspoon of maple syrup.
Morning Snack: a small handful of trail mix.
Lunch: a mishmash of leftovers—steamed broccoli (for the green), macaroni & cheese, and a hotdog (meh).
Afternoon Snack: 2 squares of dark chocolate…
Pre-workout Snack: a couple of medjool dates (Nature’s candy!)
Dinner: our go-to tomato and white bean soup with a grilled cheese (recycled photo), which is simmering on the stove as I speak type.
Dessert/Evening Snack: to be determined!
Now it’s almost time for gymnastics…Happy WIAW!
