Because everybody needs a “mental health day” (and because we both woke up not feeling well) Mark and I stayed home from work today. We crawled back into bed after our showers, and it was wonderful sleeping late, cuddling with the dog, and staying in our pajamas most of the day.
After I started feeling better, I was actually productive by doing some work on Mark’s anniversary gift and finally getting a hair cut. I’m embarrassed to say that it’s been months since my last one. Oops.
One thing I’m not embarrassed about is doing my roundoff-back handspring-back tuck on the regular floor last night at gymnastics! One of the coaches stood there as a spotter, but considering I was well above her head when I flipped, I’m ignoring the fact that her hand barely grazed my back and am scratching this goal off my 30 Before 30 list. Yay!
This giant 3-lb Taylor’s Pork Roll (mailed to us by our wonderful Seattle family) is also pretty exciting. We received it about a week ago, and we finally decided to fry some slices to go with scrambled eggs and cinnamon raisin toast.
It’s pretty darn tasty and reminds me of regular ham and canadian bacon. I enjoyed making an open-faced sandwich of sorts; the salty meat paired well with the creamy eggs and sweetness from the bread. I also think the pork would be excellent in some type of hash.
Now it’s time to plan dinner…and survive the torrential downpour that’s currently making its way along the Gulf Coast. Happy almost-weekend!
