This Wednesday couldn’t be any better culinarily (is that even a word?).
I woke up this morning to discover that Alabama is two-thirds of the way to the 21st century after the Legislature passed homebrewing legislation late last night. All it needs is the Governor’s signature.
I don’t even care that we’re last in the nation (although our law would be enacted immediately, whereas Mississippi’s won’t go into effect till July, I believe…so #49 it is!).
I was also pretty excited to read that Whole Foods is finally building a location in Mobile next year. If Trader Joe’s would also follow suit, then all of my foodie dreams would come true!
My What I Ate Wednesday posts are getting a bit mundane. Yes, I eat yogurt or smoothies every morning, but I rarely remember to photograph my other meals. This week, it’s all about the typical weeknight dinner.
Last Thursday: Zucchini “pasta” with avocado cream sauce
Last Friday: Mixed grill and hummus w/ pita from Mediterranean Sandwich Co.
Monday: Baked turkey breast with steamed broccoli and couscous
Tuesday: Whole wheat rigatoni with mushrooms and mascarpone cream and iceberg salad
Tonight: Eggplant and brie panini with tomato soup
Mark and I plan a majority of our meals over the weekend, lest we fall into the rut of pasta, boring salads, and takeout for dinner. Though we occasionally order a pizza (or pick up food like last Friday), we usually find comfort in cooking our dinners each night. After sitting at a desk all day, standing in the kitchen chopping, stirring, sautéing, etc. is therapeutic! It also helps that most of our dinners yield plenty of leftovers for us to bring lunches to work.
