Happy Memorial day, especially to those who have served and sacrificed!
It feels great to have a 3-day weekend…and to have a 4-days off the following weekend when we go visit the in-laws in their new home.
Saturday began with Bikram, much like last week, and later in the day we went over to my parents for a cookout.
Sunday we decided to soak up some sunshine and drove to Biloxi to the beach. I’ve been craving a trip to Gulf Shores/Orange Beach, but since it was sure to be crowded for the holiday, Biloxi was the next best thing.
It was beautiful and wasn’t crowded at all.
After we’d soaked up enough rays and became hungry, we drove down to the Beau Rivage for their buffet.
Plate number 1 took on an Asian theme.
This is Mark’s plate, but my plate number 2 involved shrimp, jambalaya, stuffed pork, and steamed broccoli (as well as some king crab legs Mark kindly peeled for me).
Round that out with 2 desserts—and a few glasses of cheap champagne—and I was quite full.
We then went to Jimmy Buffet’s new(er) Margaritaville casino. It wasn’t too impressive, honestly. Looked like a trip back to the ’80s or ’90s!
We did enjoy a margarita on the deck, though, before heading back home.
Monday morning I had a great yoga session and enjoyed lounging around the house. We’ve had such amazing weather lately, so I spent much of the day in the backyard.
Mark cooked shrimp-stuffed mirlitons (chayote squash) for dinner (served with roasted jicama fries that I made) before we sucked it up for our 2-day work week.

We have a regular Margaritaville here, and I wasn’t impressed either. It must be the whole novelty of it. It looks like ya’ll still had a great trip! I hope you enjoyed having the 4 days off! 🙂

Thanks! Yeah, I’ve never even bern to the regular Margaritaville…just not my thing. But I gotta love Jimmy since he’s a local boy. 🙂
