One of my absolute favorite things about Spring and Summer is the abundance of fresh produce. Though I haven’t met a fruit I didn’t like, strawberries will always be at the top of my list.
Nothing beats a freshly-picked, juicy, and sweet strawberry, especially if it’s locally grown in Baldwin County, AL or in Ponchatoula, LA.
In honor of the beloved strawberry and our current gardening success (just wait till the scorching summer months are here, and our mint will shrivel away), I’m sharing my new favorite smoothie, one that’s full of springtime flavors and healthy fats.
Seasonal Strawberry, Avocado, & Mint Smoothie
serves 1
Ingredients
- 1 cup fresh or frozen strawberries
- ½ medium-sized avocado, pitted and peeled
- ½ frozen banana
- ½ scoop plain or vanilla-flavored protein powder*
- ½ cup spinach
- 1 cup almond milk (or milk of choice)
- up to ¼ cup fresh mint**
Directions
In a high-speed blender, mix all ingredients until well-incorporated. Enjoy!
*If you want a more substantial, meal-replacing smoothie, go ahead and use the full scoop of protein powder.
**Start with a few sprigs and add the mint to taste. I used the full ¼ cup, and it was a bit overpowering.
This smoothie is as refreshing as it is pretty. I love the light pink color, and the mint complemented the sweet strawberries quite well.
