The first time I tried naan bread at an office potluck over 5 years ago, it was love at first taste.
I’ve had the authentic, freshly-made version a few times since then, but I’ve never attempted to make it myself.
Thankfully, these pre-packaged Stonefire naan do just fine in a pinch. Plus, they come 2 to a pack, which is perfect for Mark and me.
For today’s What I Ate Wednesday, I’m sharing last night’s quick and simple dinner: no-fuss naan bread pizzas.
(For the sake of tradition, Tuesday’s breakfast was a peach-avocado smoothie and piece of whole wheat toast with Sunbutter. My lunch was leftover ravioli with pesto, and I enjoyed an afternoon snack of fresh strawberries and lemon-ginger tea. None of which I photographed.)
Naan Bread Pizza
serves 2 (with leftovers, possibly)
Ingredients
- 2 pieces naan (homemade or packaged)
- 4-6 tbsp red sauce
- 1 orange or red bell pepper, sliced
- ½ red or yellow onion, sliced
- grated cheese
- spinach
- fresh oregano, chopped
- minced garlic, to taste
- red pepper flakes, to taste
Directions
- Pre-heat oven to 400º and place naan on a baking sheet.
- Spread red sauce over naan. Add garlic, oregano, onion, bell pepper, spinach, red pepper flakes, and cheese.
- Bake for 8-10 minutes or until spinach has wilted slightly and cheese has melted.
- Serve and enjoy!
I’m not even sure if you can call this a recipe, but lately my inspiration has been lacking. Or maybe I’ve just been trying to get the most out of my free time. Blogging is difficult when you’re working a 40-hour week, practicing 90 minutes of yoga at least 3 times a week, and trying not to neglect your husband (and dog) in between! I don’t want to churn out poorly planned posts just because of some unwritten scheduling rule, so bear with me while I beckon the creativity from its hiding place.
