Confession: I have a thing about wasting food. In fact, I’m kind of a zealot about it (just ask my husband).
Even so, I manage to waste far more food than necessary (fresh vegetables that are inadvertently pushed to the bottom of the crisper and rediscovered weeks later, anyone?). To rectify this, I’ve been trying to reuse leftovers creatively in new meals, freezing fruits and vegetables that are nearing their expiration, and emptying the pantry/fridge instead of making impromptu grocery trips.
Since we’ll be out of town the next four days, we skipped our Sunday grocery trip in an effort to use up foods we already had. The downside of this, of course, is we have to stop by the store on our way home Sunday—or get extremely creative next week.
Anyway, here’s What I Ate Wednesday clearing out the kitchen edition.
Breakfast: The remnants of my plain Greek yogurt topped with coconut flakes, rice krispies, puffed millet, frozen strawberries, wheat germ, and a spoonful of Dark Chocolate Dreams.
Lunch: Yesterday’s lunch was leftover mushroom soup from last week and a salad of broccoli slaw, cucumber, carrots, and red onion. Today, I scrounged together the remaining chicken sausage from Monday night’s dinner and a leftover sweet potato I baked last week.
Snack: Since I didn’t get to stock up on fresh bananas this week, I snacked on trail mix and cashews that I keep in my desk.
Dinner: Last night we had breakfast for dinner (brinner!) and emptied the carton of eggs, package of bacon, and bag of baby potatoes that never would’ve survived 4 more days. Tonight, we had simple pasta (finishing an already-opened jar of sauce) and canned peas. I also drank a Moretti beer that had been in our fridge way too long.
