I’ve become so pathetically predictable: I only seem to post on Mondays and Wednesdays these days. It’s not that I’ve been incredibly busy; it’s just that the computer screen is the last thing I want to see when I’m home from an 8-hour desk job!
Speaking of an 8-hour desk job, I’m so glad the weather was nice today and allowed me to walk down to the pier during lunch because I got to watch a 7-to-8-foot alligator swim around for a while. According to the people fishing, his name is Charlie—and he actually swims toward you when whistled at! At one point, he looked like he was smiling at us.
I wish I’d had my phone with me to snap some pictures—but maybe I’ll catch him another day.
Since today is What I Ate Wednesday—instead of What Ate Me Wednesday—I’m sharing yesterday’s meals with you all.
Breakfast:
Whole grain toast with smashed avocado—and a mug of coffee, of course. (The very toast that caused this unfortunate mishap.)
Morning Snack:
The trusty banana.
Lunch:
Leftover spaghetti and meatballs (photo from the night before).
Afternoon Snack:
Coconut yogurt.
Dinner:
Our attempt at Edible Perspective’s Basil, Garlic, & Tomato Veggie Burgers, some (nearly-burned) sweet potato fries, and a Sam Adams lager. We also had a mini key lime pie for dessert that was pretty awful and contained some questionable ingredients. (The sweet tooth was calling, and we were out of ice cream.) 🙁
Though the flavors were spot-on, the burgers turned out incredibly mushy. I can’t fault the recipe because I didn’t dry off anything (the kale was wet—as were the onion and chickpeas). Because my food processor is a bit small, I think I ended up over-processing the mixture in order to break everything up. The tomato slice may have drained some juices into the burger as well.
Even with my half-success, I recommend trying these! I’d try adding more ground oats or even some bread crumbs—and maybe making the patties the night before and allowing them to firm up in the refrigerator before cooking. Baking them in the oven may have helped with the moisture, too. We stuck 2 uncooked patties in the freezer—and we have 2 cooked ones lingering in the fridge. Hopefully they’re just as good for rounds 2 and 3.

The pier was pretty high up–but yeah, I would NOT have been the guy in the kayak out there. Scary!
