Oh, hey there, friends!
We’re already half-way through the work week, which means it’s time for another What I Ate Wednesday.
Once again, I’m being unconventional (no single full day of meals to share)—but you can blame my wonky appetite for that. I’ve been neglecting the veggies and satisfying a mega sweet tooth the last few days.
While I believe in (and thrive on) a balanced diet, sometimes, you just have to listen to your cravings. I’ve written about intuitive eating before, and I believe that there’s room for indulgence in a healthy diet. Just be smart about it. My body knows when it’s had enough sugar, and it tells me through new cravings for vegetables.
For the 2nd time in 2 weeks, I made (and greedily consumed!) chocolate chip banana bread. The first (and better) version followed this recipe exactly, but I made a few changes the second time around. I reduced the chocolate chips to about ¼ cup, added ¼ (or so) cup of chopped walnuts, substituted agave nectar for the maple syrup, and replaced the teaspoon of vanilla extract (since I ran out) with about ½ teaspoon of almond extract. Though it was drier and denser, it did calm my sweet tooth for a while, which is all I can ask for.
After Sunday night’s early dinner of red beans and rice, both the husband and I had a craving for cereal. We nervously shoveled granola and honey nut clusters into our faces while watching the next-to-last episode of Breaking Bad. I can hardly wait till next Sunday to see what happens!
Tuesday morning’s breakfast was more like dessert: overnight oats in a Peanut Butter & Co. Dark Chocolate Dreams jar with mashed banana, plain Greek yogurt, and chia seeds.
Vegetables haven’t been completely absent from my diet, though. Monday night’s dinner included delicious ground turkey, orzo, and tomato stuffed bell peppers, and tonight we’re revisiting our favorite mushroom soup (I guess mushrooms are technically a fungus—not a veggie—but just work with me here). Tomorrow night BLTs are on the menu, and lunch will probably include a huge salad.
See? It’s all about balance…
