I have a confession to make: I’m the worst food blogger ever.
Lately, my meals have become increasingly boring. We’ve been cooking old stand-by recipes like tomato-white bean soup, slow-cooker roast beef, and various salads, but we haven’t created or attempted anything exciting (Monday night’s red beans and rice being the exception). Most of my lunches have consisted of the previous night’s leftovers or some rather uninspired sandwiches.
I think my evening yoga classes have contributed to the absence of “food” in foodiecology, since Mark’s been doing all the cooking and prepping on those nights. (Who am I kidding? He’s the chef every night).
I’d planned on posting an epic What I Ate Wednesday—New Orleans style—this week, but since I only took photos of a few our lunches and dinners and shared most of them in my weekend re-cap post, I’m just going to have to bore you with today’s actual meals. At least they were tasty.
Breakfast: A mug of coffee paired with overnight oats with almond milk, chia seeds, half a banana, hazelnuts, dried cranberries, and a spoonful of Justin’s Chocolate Hazelnut Butter.
Since our air conditioner at work is currently set to arctic, I also had a cup of lemon/ginger herbal tea mid-morning to warm up!
Lunch: A quarter of a muffuletta (part of our NOLA bounty) and some super-addicting Snapea Crisps.
Afternoon snack: A banana, per usual.
And, attempting to control my post-work hunger, I downed a couple of spoonfuls of chocolate hazelnut butter and a mini cannoli from Brocato’s upon returning home.
Dinner: Some Amy’s tomato bisque, a grilled cheese, and some Terra Chips. With a couple of glasses of wine.
