Hello, hello!
It’s been far too long since I’ve joined the What I Ate Wednesday party. In all honesty, I’ve been too exhausted lately to party for real, but since this weekly shindig doesn’t even require me to leave my chair, I think I can manage.
Before I get into the food, can I just say that I’m loving the warm weather we’ve had lately? As much as I adore winter (and scarves, and boots, and peppermint lattes, and the holidays, and all the wonderful things winter entails), I’m beyond ready for SPRING!!! It’s been a cold one this year.

Although the calendar says it’s still winter—and we’ll probably have a few more cold snaps before Easter—I think it’s safe to say spring has arrived on the Gulf Coast. Birds are chirping, flowers are blooming, allergies are making themselves known (ugh!), and little specks of green are showing up overnight among the dead grass and bare trees.
Although my meals aren’t particularly spring-like, I did manage to snap a whole day’s worth of pictures and sit down and write a post. Pat on the back, no?
Here’s What I Ate Wednesday Tuesday.
Breakfast
A generous slice of my PB&J-inspired oatmeal bake. It was a little crumbly and dry, but I liked it that way; it reminded me of a really soft, thick (but lightly-sweetened) cookie!
Morning Snack
A bowl of fresh pineapple, strawberries, and blueberries—because who doesn’t love fresh fruit?
Lunch
An almond butter and strawberry jelly sandwich…
…plus a side of “Cajun Caviar” from Rouse’s, (which is just a black-eyed pea salad). An odd combination, but you work with what’s in the fridge, right?
Afternoon Snack
A cup of pomegranate (not my favorite) Chobani. Plus a few Pringles and an Italian fig cucidata (cookie) that weren’t photographed.
Dinner
Eggplant parmesan with whole wheat angel hair pasta. (This is an old picture with regular white pasta, but you get the idea.)
Dessert
A small bowl of cookies & cream ice cream topped with 2 chocolate chip cookies. The sweet tooth was calling!
Hope everybody’s having a great week! If you’re not, at least it’s Hump Day! Things only look up from here (especially when you’re taking off Friday like I am to visit some great friends and enjoy the St. Paddy’s parade in New Orleans)! Till next time… 🙂

I always forget about nut butter & jelly sandwiches.. which really is such a shame becase of how delicious they are!
