Happy Wednesday—and last day of winter (as per the calendar, anyway)—you guys! 🙂
This week has been going quite well, but of course I’m excited for the official arrival of spring and the upcoming weekend.
Work’s been steady so far this week: not too overwhelming or busy, but not slow either. I’ve been enjoying my lunchtime walks (today was the most gorgeous day I’ve seen in weeks) while being pretty darn lazy after work (though I did go on a 30-minute run this evening in preparation for the Azalea Trail Run 5K this Saturday). I hope I survive!
I also managed to photograph the entire day’s worth of eats—so here’s a true What I Ate Wednesday.
Breakfast Part 1
A bowl of Multigrain Cheerios with milk and some raisins for good measure
Breakfast Part 2
A delicious green smoothie (recycled kombucha bottles are perfect for transport)
Peach and Mango Green Smoothie
serves 2
Ingredients
- 3 large handfuls spinach
- 1 cup frozen mango
- ¾ cup frozen peaches
- 1 cup orange juice (fresh-squeezed would be optimal, but I used bottled)
- 1 cup milk
- ½ cup plain or vanilla Greek yogurt
- ¼ cup raw oats
- 1-2 tbsp wheat germ
- 6 ice cubes
Directions
Add all ingredients to a blender and process until smooth.
Lunch
Leftover tomato and white bean soup with hummus/pita chips on the side
Afternoon Snack
Chobani Peachy Pistachio Flip and an un-photographed banana
Pre-dinner/Post-run Snack
Sliced Dubliner cheese (the best!) with a few Wheat Thins
Dinner
Half a mixed grill (been craving these sandwiches like a mad woman lately!) and spinach salad
I think I did a little better on the vegetable front (that soup is loaded with them and I definitely got a good dose of spinach and green). Anyway, that’s all I’ve got for today. I hope everybody enjoys the rest of their week and sails smoothly into the weekend!
