Happy Monday! I feel that referring to today as “happy” is perfectly acceptable since next Monday is Memorial Day and most of us have a 3-day weekend awaiting us.
It’s been a few weeks since I shared my last weekly meal plan, so I thought I’d pop in today with some of the dinners we plan on cooking. Since we’re heading up to visit my in-laws Friday evening after work, we only have 4 meals to plan for. We made a quick grocery trip Sunday afternoon to get a few things like shrimp, veggies, some fruit for the week, and a few pantry items like coffee, cereal, etc. We also got a delicious fillet and some potatoes for last night’s dinner.
Monday: Grilled shrimp with grilled zucchini, red bell pepper, and onion, with polenta on the side.
Tuesday: BLTs made inside pita pockets (since we had a few remaining from last week’s falafel dinner) with baked sweet potato fries.
Wednesday: Leftover vegetable soup (from the freezer) + grilled cheese (never gets old!).
Thursday: Easy fried rice made with brown rice, egg, and frozen veggies.
Anything that yields leftovers (like the fried rice) will be eaten the next day in our lunches. I’m looking forward to spending Friday night through Monday morning with family, and hopefully we’ll have some yummy meals and snacks while we’re there (here’s looking at you, Berry Berry Good froyo!).

- Do you grocery shop with a meal plan in mind, or do you just buy what looks good, is on sale, etc?

My go-to easy weeknight meal is any type of stir fry with whatever I have on hand. This week it was tofu, buckwheat soba noodles, broccoli, carrots, cilantro, avocado, and TJ’s Thai Sweet Chili Sauce. I’ve been trying to come up with a meal plan or at least a few meals before I shop this year and it’s worked out pretty well. During finals all bets were off and I just bought a bunch of Amy’s dinners and some fresh fruits and veggies to supplement but now that I’m just working I have more time to devote to cooking 🙂
