Hi there, dear readers! I hope your Wednesday is going swimmingly. (“Swimmingly” is a very appropriate word, given the hours of torrential rain we experienced last night. It’s like I live in the Amazon sometimes.)
Let’s briefly talk cravings. In addition to the usual pizza, eggs, hummus, and ice cream cravings I’ve been having all pregnancy long, I can’t seem to get enough smoothies lately.
Though I haven’t been making them too often for breakfast (they never taste as good after sitting in the refrigerator all night), I do have a delicious, creamy, cinnamon-filled creation to share today.
It’s easy as throwing a few ingredients into a blender (aren’t all smoothies?), and the finished product really does taste like its namesake thanks to the creamy almond butter and cinnamon.
Snickerdoodle Smoothie
serves 1 as a snack or dessert
Ingredients
- ½ large frozen banana
- ½ cup almond milk (or milk of choice)
- ¼ cup raw old-fashioned oats
- ¼ cup plain Greek yogurt
- 1 heaping Tbsp almond butter (cashew would work nicely, too)
- 1-2 medjool dates (soaked in water to soften)
- ¼ tsp vanilla extract
- ¼ tsp (or more, to taste) cinnamon
Directions
- Add all of your ingredients to a high-speed blender or Magic Bullet and blend until well-combined.
- Pour into your favorite glass (or bowl if that’s your thing) and top with a sprinkle of cinnamon and a pinch of shaved coconut. Serve immediately.
And although I was lazy and didn’t snap any pictures, here is my words-only version of What I Ate Wednesday.
Breakfast: 2 slices cinnamon-raisin Ezekiel toast topped with plenty of Sunbutter
Morning snack: a small handful of dried fruit (apricots, figs, and raisins)
Lunch: leftover hamburger & hotdog (no bread), grilled squash/zucchini, and some not-so-tasty watermelon
Afternoon snack: some oreos, a cup of rooibos tea and a key lime Chobani flip (love that flavor!)
Dinner: Amy’s tomato soup, grilled cheese, & sweet onion Skinny Sticks (and probably some kind of dessert to follow)
