Happy Father’s Day to all the dads and dads-to-be out there!
It’s crazy to think that, in just a few months, this guy right here will be a father. If he treats our son anywhere close to how well he treats me (and Iggy, our fur-baby), then I know he’s going to be an absolutely amazing dad.
This guy right here is pretty awesome, too. I’m lucky to have grown up with the most loving, encouraging, and hard-working father imaginable. We’re missing my mom this weekend while she’s in West Virginia, but I’m glad we get to spend today with him.
Chicken-dancing at my wedding! (Forgive me for sharing, please?!)
And I couldn’t forget my wonderful father-in-law. He’s done a pretty outstanding job raising my husband, and I know both he and my father are going to be fantastic grandparents to Baby M.
This week I only have a few articles and recipes to share, but I thought I’d post them anyway. Happy reading, and have a fantastic Sunday!

Oh my…these look fantastic. Way to combine 2 of my favorite cuisines into one beautiful, summery, pan-fried dish!
Brûléed Yogurt via Love & Olive Oil
What a fun idea to dress up simple (but delicious) yogurt + fruit. I need a kitchen torch!
Baked Seafood Dip with Crab, Shrimp, and Veggies via Peas and Crayons
Although I rarely order them out, I freaking love creamy baked seafood dips. This one looks like no exception!
Breakfast Pizza via Real Food By Dad
I’ve never had breakfast pizza, but I feel like I should change that. This looks delicious!

James Cameron-Backed School To Terminate Meat and Dairy via NPR
Interesting. This idea makes sense, given that the school bills itself as an “environmental.” I especially love how they grow their own vegetables and sell them to others. There’s no way this could work in public schools across the board (nor should it, since a plant-based diet is a choice and meat/dairy are economical options for schools with limited funding), but it’s a nice goal. Kids can (and do) get adequate nutrition from a plant-based diet, just like they do an omnivorous one.
Can You Call Yourself An Environmentalist And Still Eat Meat? via NPR
In a perfect world, we probably wouldn’t raise animals (and treat them horribly) solely for food. Nevertheless, I think environmentalism—just like feminism, for example—has many definitions and degrees. I consider myself to be an environmentalist, primarily because I try not to harm and take for granted the natural beauty around me. Although I live in a very car-centric city, I limit my driving. I buy local when possible. I recycle, reuse, and reduce waste when I can. Still, I eat meat. I think meat (much of it, at least) is delicious! I try to limit my consumption of it, and I think Jonathan Safran Foer makes the most convincing argument for veganism I’ve ever read in his book Eating Animals, but ultimately, my ethics just aren’t strong enough. I eat meat for selfish reasons—and reasons I call “practical.” I’m not a bad person for it, but I do acknowledge that I just don’t have a strong enough moral desire to cut out animal products completely.
Pregnancy and Body Image via Fittin Pretty
Good points to remember. I may be feeling pretty confident now, but I’m sure once I move into the 3rd trimester and really start packing on the pounds, my opinion may change. In the end, though, it’s all about the babe.
Surprise! Healthy Obesity is a Real Thing. Here’s What That Means for You via Greatist
I’ve heard this in the past; that your BMI and weight don’t signify health, especially since some of the thinnest people can also be some of the unhealthiest. (Especially thin people with metabolic issues or Type II Diabetes; the disease is often worse and more difficult to regulate in thinner people, I’ve read.) Regardless, everybody should eat well, exercise to their abilities, and take care of their bodies. We all come in different shapes and sizes!
