Hi! How was your weekend?
Ours was good. Saturday we did a bit of shopping for the babe; however, it was for winter clothes he actually needed, which doesn’t break the rules of yesterday’s post. Sunday we went downtown for a free concert, visited the brand new Whole Foods, and prepped for the upcoming week’s meals and Baby M’s FIRST BIRTHDAY PARTY on Saturday (I’m feeling all the feels, y’all).
Although I miss the sunshine, I’m loving the cool weather these last couple of days! 🙂
As I promised, I’m back to sharing Meal Plan Monday. This is a review of last week’s work night dinners. (Pictureless, because I have no storage space on my phone—#bloggerfail.)
I don’t know about you, but this next week, we’re going to utilize the slow-cooker more. Oh, and since it’s finally beginning to feel like FALL, you should expect a lot of soups and comforting recipes in the upcoming weeks.
Monday: Mark made hamburgers (topped with sautéed onions) and a mix of oven-baked sweet potato and regular french fries. The weather was kind of icky, so he didn’t get to grill them as originally planned. Baby M inhaled some hamburger pieces, too!
Tuesday: BLATs. This is simply a BLT + avocado. Instead of layering avocado slices as we usually do, we whipped up a pseudo-guac and used it as a spread. These were delicious—and filling. The hubs does not skimp on the bacon.
Wednesday: Chicken + Waffles. The chicken was pound thin, lightly breaded, and sautéed like usual. We were going to have it over salad, but since we just bought a new waffle maker, we tried something new. We just used a waffle mix—and while it was tasty, I missed having a veggie.
Thursday: Soup + grilled cheese (plus a few of Baby M’s Goldfish crackers). I went with Amy’s low sodium chunky tomato bisque. I can’t wait to restock our freezer with hearty homemade soups for fall/winter, but Amy’s does in a pinch.
Friday: Spaghetti and homemade meat sauce dropped off at the house by my parents plus a side of green beans. I’m glad they offered, because we didn’t really have a plan and probably would’ve opted for takeout.

Chicken and waffles is something I’ve never had. I need to try it out, especially since we have a waffle maker! Maybe pumpkin waffles or sweet potato waffles would solve the no veggie issue?

Isn’t that funny, since chicken & waffles are (supposedly) such a ubiquitous southern food? I can’t believe I didn’t think of the pumpkin/sweet potato waffle idea.
