Top oâ the morning to you. Letâs talk about food.
On Monday morning, I broke out the boots, wore a light jacket, enjoyed my hot coffee more than usual, and made hot oatmeal for the first time in ages. This batch needed a bit more cooking water (I eye-balled the measurement), but they hit the spot with cinnamon, raisins, almonds, and a pinch of turbinado sugar. In fact, I inhaled them in about 3 seconds, which is probably due to the fact that I ate cereal for dinner on Sunday and Saturday night. Do as I say, not as I eat?…
Just before lunch, I âneededâ a jolt of sugar. So I went for a Hershey miniature chocolate bar. The Special Dark is my favorite, though.
Lunch was veggie-licious. We had left over chicken from last week (which reminds meâhow long does cooked chicken last in the refrigerator?!!) served atop a bagged chopped salad. This one had baby kale, shaved Brussels sprouts, purple cabbage, croutons, asiago, and citrus vinaigrette. Not a #saddesklunch at all.
For a snack/desert, I ate a lovely (crumbly) chocolate mint cookie from our new Whole Foods. Oh my, Iâve found the foodie black hole. Itâs hugeâand it puts the neighboring Fresh Market to shame. Plus they have growlers + beer on tap! We were in a rush with the baby on Sunday when we stopped by, but letâs just say I understand why itâs nicknamed âWhole Paycheck.â
This humble cheese stick (never photogenicâno matter how you try to gussy it up) also happened in the afternoon.
For dinner we ate a slightly modified version of this slow-cooker chicken enchilada soup. I forgot to get fire-roasted tomatoes, so we just went with diced. We had tortilla chips on the sideâbecause chips are 100% required for a Mexican-themed dishâand plenty of cheese on top. All in all, the soup was pretty good.
