Hi there! How are things shaking this fine autumn Monday?
I hope your weekend was as fantastic as ours. Saturday we had gyros at Greek Fest (Baby M had some bites, too), and we spent Sunday having lunch at Panini Pete’s, enjoying some fresh air at Streets Alive downtown, and taking Bazooka to his first pumpkin patch (where he had a minor meltdown). We couldn’t have asked for more beautiful weather!
I’m going to be 100% honest—last week’s “meal plan” was uninspired. Why—you ask? Because we cooked enough food to feed a small army over the course of Baby M’s birthday weekend. To avoid waste, we survived primarily on leftovers for lunch and just kind of winged it for dinner. I normally do ok with leftovers but not when I have to eat the same things a billion times during the week!
At this point, I really just want a HUGE salad to balance out all of the meat and starch we consumed (hamburgers, hotdogs, muffulettas, and bacon…oh my!)
At least it all tasted delicious. Also, just because I write a (sometimes) healthy living blog and preach about eating healthful foods, it doesn’t mean I am perfect. Sometimes I slip and eat poorly (it’s worth noting that I generally feel terrible as a result). When you have a one year old and work fulltime, convenience often wins and you can’t expect to eat a perfect diet (whatever that may be).
So, in all my transparency, here are last week’s mostly random dinners.
Monday: brinner, which consisted of fried eggs + leftover bacon and breakfast potatoes from Sunday’s brunch.
Tuesday: leftover gumbo from the party (served over rice) + baguette (coincidentally, it was National Gumbo Day!)
Wednesday: farfalle pasta with jarred marinara, green beans + garlic bread (made on leftover hamburger buns).
Thursday: a much welcomed break from the leftovers—a quesadilla from Moe’s + chips/salsa/guacamole
Friday: noodle soup + grilled cheese
Were these the healthiest and most creative of meals? Absolutely not. But I am proud that we threw away very little food over the course of the week. We froze extra gumbo and ground beef that we didn’t use, and not having to make extra mid-week grocery trips meant our meals were budget-friendly.
Although the hubs may not want to hear it, next week is going to be ALL about the veggies. 🙂

Heck no to food waste. We pretty much always eat all of our leftovers unless it was something we didn’t love in the first place.
Healthy eating during the week is generally easier than the weekend, but that’s mostly because I’m a littler more loose on the weekend!
So glad you guys got to enjoy the Greek festival!

Yep, we generally let loose food-wise on the weekends, too. Gotta treat ourselves sometimes! 🙂

I’ve learned to embrace leftovers! I hate letting food go to waste! Although I don’t always do the best planning.

I’ve found the more detailed our plan is, the more likely we are to follow it! Otherwise, it’s “hmmm…pizza sounds good!” 😉

Thanks. Yep, I’d pretty much starve without leftovers. They’re 90% of my workday lunches.
