Happy Monday! I hope you all had a fabulous weekend.
Ours was relaxing and enjoyable. After the A/C repair men left Saturday morning, we went to lunch at Zoe’s (Baby M loved the hummus and turkey from Mark’s sandwich—he even ate a piece of Kalamata olive!), took a walk on campus at Spring Hill, ran a few errands, and got ice cream (pumpkin + peanut butter cup for me) at Old Dutch. Sunday was spent sleeping, grocery shopping, watching football (Who Dat?!?!), and planning for the week!

Anyway, let’s talk about last week’s dinners. We did a good job of sticking to our plan. I did the shopping on Sunday, and, as usual, Mark did the cooking.
Monday: Fillet mignon, mashed potatoes, and roasted broccoli. Once a month (maybe?) we treat ourselves to steak. These were delicious, and Baby M was a big fan of the potatoes, too.
Tuesday: Roasted acorn squash served over freekeh (what I didn’t cook when I made this), sautéed spinach, and toasted walnuts. The salad was drizzled with a quick, homemade vinaigrette: pomegranate balsamic vinegar, dijon mustard, olive oil, Italian seasoning, salt & pepper, and a splash of orange juice. I had high hopes for this vegetarian meal, but it was just so-so. Leftovers made a great lunch, however.
Wednesday: While I was at the gym getting my butt kicked at bootcamp, Mark made spaghetti and heated up our freezer stash of marinara and meatballs. We had garlic bread on the side (made on leftover hamburger buns).
Thursday: Defrosted white bean chicken turkey chili (made with turnip greens instead of chard). Such a hearty and filling meal—it’s one of our favorites! It freezes really well, too.
Friday: We treated ourselves to the House Special at Mellow Mushroom. Some nights, you just want pizza, and tonight was one of those nights.
We did a lot better actually planning meals this week. Monday night’s dinner was more expensive than usual, but, like I said, we rarely cook steak at home. Sometimes you just need to treat yourselves! One way we saved was by taking advantage of our freezer stash, although now we need to build it back up! I see many nutritious autumn soups and stews in our future!

Thank you. I guess this post is bad timing on my part with the WHO report on red meat being carcinogenic. Oh well…everything in moderation, right?! At least it’s not wrapped in bacon? 😉

Oh yes! It’s ALL about the crust.
All the glory goes to my husband for the steak. Cooking meat scares me, lol.

I love meal planning too! It saves so much time during the week. That Mellow Mushroom place looks amazing! I wish there was one here in the San Diego area. I’m pretty basic when it comes to pizza – usually just a cheese or pepperoni is enough to satisfy me. Yum. Now I want pizza!

MM is really delicious, but I’m sure a city like San Diego is filled with awesome restaurants! Oh, and there’s nothing wrong with classic cheese/pepperoni. 🙂
