Everybody knows avocado = guacamole, but if you’re searching for a creative way to use up your leftover Cinco de Mayo avocado stash, you’re in the right place. This round-up of 15 unique, mostly-healthy avocado recipes will make you say, “guaca-scuse me?”
If you’re anything like me, you were in your happy place—elbow-deep in a bowl of guac—last night. And you probably drank one-too-many margaritas. Don’t worry, it happens to the best of us.
But now that you’re nursing a guacamole hangover (go with it) on “Seis de Mayo” and still have a few perfectly ripened avocados lying around, what do you do? If the thought of one more bite of guacamole makes you cringe (pretend it’s possible for the sake if this post) then you’re going to appreciate this round-up.
I reached out and asked some of my buddies from the BGB Community to share their favorite and most unique recipes using avocado. (Side note: I promise this is the last round-up for a while—I can’t help that a bunch of ideas came to me at once!)
