This tropical pineapple-coconut water iced tea rum cocktail is the perfect beverage for summertime. It’s light but boozy and guaranteed to quench the thirst of iced tea and rum fans alike.
I need to get something off my chest: I’m not a huge cocktail person.
If you ever took a look at our liquor cabinet (the same one that Bazooka has now learned how to open—terrific!) you would think otherwise—until you learned that 90% of our collection of liquor has been in the cabinet since we moved into our house 5+ years ago.
I’m just more of a beer + wine person.
The good thing is, I’m also an iced tea person. Especially if that iced tea is lightly flavored with pineapple and coconut.
A few weeks ago Republic of Tea sent me a sample of one of their new coconut water iced teas.
How can it be “coconut water iced tea” if it’s in tea bags? Apparently the tea contains coconut water crystals as well as other natural flavorings. Although I wavered between mango and pineapple (matcha isn’t my jam), I ultimately went with pineapple because I had grand visions of creating some sort of cocktail with a fresh pineapple garnish. You’re welcome.
While delicious on its own (especially on a sweltering summer day when your air conditioner briefly stops working!), this stuff is even better made boozy with rum, sparkling water, and fresh fruit.
Pineapple-Coconut Water Iced Tea Rum Cocktail
Ingredients
- 1 quart pineapple coconut water iced tea
- 1 can La Croix coconut sparkling water
- 4 oz light or coconut rum
- fresh pineapple, sliced or cubed, for garnish
Directions
- Brew iced tea according to package directions.
- To 4 glasses of ice, add 1 cup of tea, 1 oz rum, and sparkling water to taste.
- Gently stir to mix and garnish with sliced pineapple.
Tip: if you want a stronger “tea” flavor (this tea is pretty mild), I would steep the tea for closer to 10 minutes instead of the recommended 5-7.
Also, if you don’t have flavored tea or flavored La Croix, you could use regular cold brew or seltzer and add a bit of pineapple juice and coconut water. The world is your oyster cocktail.
I don’t want to get crazy, but after trying this, I think I’m on my way to becoming a cocktail person. Or at least a pineapple-coconut water iced tea cocktail person.

Now this sounds like a cocktail that I would like. I’m not a huge alcohol person; I just don’t like the taste, but I love iced tea, and combining it with coconut and pineapple sounds really good to me.

Ha, I’m not big on liquor (but I love wine) either – the taste is too strong for me unless it’s heavily disguised in a drink. But you’d probably like this – it’s light and you can of course reduce the amount of rum (or vodka, even).
