Lately I’ve been seriously craving smoothies.
Despite the cooler weather last week, we’ve had a lot of perfectly spring-like mornings. In fact, the azaleas are in bloom, and their lovely hot pink color is the nearly the same shade as this pitaya bowl.
Speaking of azaleas—my sweet Bazooka picked some for me the other day and it just melted my heart.
He told daddy when they got home from daycare, “I want to pick flowers for mommy.”
Such a little heart-breaker, that boy. <3
So back to this smoothie. While flowers from my sweet baby boy will always be something I cherish, I tend to respond better to edible gifts!
(Just ask Mark. Anytime he texts me “I bought you something” or “I got you a gift,” the first thing I text back is “is it edible?”)
Anyway, if you want to practice some “smoothie self-care,” then this colorful creation can be an edible gift to yourself.
What, might you ask, is smoothie self-care?
Simple. Smoothie self-care is making yourself—and your needs—a priority.
In my own case, it’s recognizing that busy, rushed mornings tend to trigger my anxiety, and that, in order to take care of myself, I should take a few minutes to create something delicious and nourishing instead of giving in to whatever may be stressing me.
Sure, gathering your ingredients, actually making and assembling your smoothie, and cleaning up after takes a little bit of time, but it’s worth it.
The Ultimate Hot Pink Pitaya Bowl
serves 1
Ingredients
- 1 small frozen banana
- ½ cup frozen strawberries
- ½ cup frozen zucchini (or cauliflower)
- ⅓ cup frozen mango
- ⅓ cup plain or strawberry Greek yogurt
- 1 Tbsp pitaya powder
- ½ cup milk (more, if needed)
- splash of orange juice
Directions
- Add all of your ingredients to a blender. Blend until smooth. Add extra splashes of milk and orange juice until desired consistency is reached.
- Pour into a bowl and add the toppings!
This smoothie is gorgeous enough on its own thanks to the pitaya powder, but I like my smoothies to have staying power and a little lagniappe, so I topped mine with Purely Elizabeth granola and sliced banana.
