These mini BLENDABELLA™ muffulettas are cute, delicious, and a cinch to assemble! Filled with a Tuscan flavored portabella mushroom tapenade, they are a fun and tasty take on a well-loved classic.
I know what you’re thinking.
Sacrilege!
Messing with something so perfect in its simplicity—zesty meats, cheese, and briny olive salad—is sacrilegious. I get it, and I hear you. In fact, before I discovered BLENDABELLA™ I would have thought the same thing.
But these are so fun. And mini. And perfect for football season or late summer gatherings.
And did I mention they’re delicious?!
Recently I was invited to participate in the Giorgio BLENDABELLA™ summer recipe contest and received samples of each of their 3 flavors: Zesty Mexican, Coconut Thai, and Rustic Tuscan (which I’m using in this delightfully bite-sized appetizer).
I adore portabella mushrooms. They are such a perfect canvas for any flavor, and I love how they are versatile enough for a main course (we often grill up a mushroom and serve it alongside a salad and some grains).
But even if you’re not a mushroom fan, these zesty blends are a great “beginner’s course” to eating and enjoying the delectable fungus among us (sorry, I couldn’t resist). They add so much texture, flavor, and color to any dish.
If you’re not quite ready to make mushrooms your main course, try out these mini muffulettas. You won’t be disappointed.
Mini BLENDABELLA™ Muffulettas
yields 12 (but can easily be doubled or tripled)
Ingredients
- 12 mini slider buns*
- ½ lb thinly sliced genoa salami
- ½ lb thinly sliced ham
- ¼ lb sliced provolone
- 1 jar of Rustic Tuscan BLENDABELLA™
Directions
- Slice your slider buns in half if they’re not already sliced
- To the bottom half of the bun, add one slice of salami, one slice of cheese, and a slice of ham (you may need to fold them since the buns are tiny)
- Top each layered sandwich with 1-2 tablespoons of Rustic Tuscan BLENDABELLA™
- Add the bun top, and serve
*Traditional muffulettas are served on a sturdy sesame seed-topped bread, but if you are unable to find those, mini ciabatta rolls or other standard slider buns will work just fine. You could even slice a French baguette in individual serving sizes for a “French-uletta.”
I will admit, these mini muffulettas are not quite as briny as the traditional olive variety, but they are loaded with Italian flavor. The Rustic Tuscan mushroom blend really makes the sandwich (a good suggestion by the hubs, I must say!) and I am anxious to try the leftover blend in a pasta dish! You could also just eat it with a spoon like Mark and I did when we did our initial taste test. 😉
