Hummus is my favorite. It’s also one of the ONLY foods my son will eat. At least it’s full of protein and fat, right?
I doubt Bazooka will eat this spicy coconut Thai variety, but that’s ok, because I want this all for myself! And since I’m stuck at home today thanks to Tropical Storm Gordon weather closure, I might snack on this stuff all day long.
You guys already saw my last recipe, and this time I’m using my sample of BLENDABELLA™ Coconut Thai blend to add a little zest and zing to one of my all-time favorite dips.
If you’re not familiar with BLENDABELLA™ let me share a little secret: it’s the best way to dress up your go-to recipes that might be tasting a little boring or too predictable. It’s a jarred blend of portobello mushrooms, spices, and vegetables that tastes spectacular on its own but is better incorporated into any recipe where you want some added flavor. A little lagniappe, if you will.

BLENDABELLA™ COCONUT THAI HUMMUS
Ingredients
- 2 15-oz cans of chickpeas, drained
- ½ cup unsweetened coconut milk
- 4 Tbsp red chili paste
- 4 Tbsp tahini
- zest + juice of 1 lime
- salt + pepper, to taste
- ice cold water*
- 1 jar of Coconut Thai BLENDABELLA™
Directions
- Add all ingredients (except for the water and BLENDABELLA™) to the container of a food processor; process on low or high until creamy.
- For an even creamer hummus, drizzle ice cold water (I used about 2 Tbsp*) into the hummus while continuing to blend.
- Give it a taste and add more salt and pepper, if needed.
- Pour into a bowl and top with a giant spoonful of BLENDABELLA™ Coconut Thai Blend
- Serve with crackers, sliced celery, carrots, and anything else you’d like
This recipe has convinced me I need to make homemade hummus more often. And maybe, if I’m lucky, I can sneak in other good stuff and convince Bazooka to eat it. One can only hope, right?…

I lovee hummus. I feel like I could eat it every day ( I probably do haha). I like the traditional or flavored one! Lately I’ve been loving edamame flavored hummus.
