I don’t know about you, but I’ve been trying to incorporate more fish into my regular diet.
We all know fish—particularly wild caught or sustainably/ethically farmed—is healthy, but if you’re not an experienced chef, cooking fish can be an intimidating task.
At least for an anxious cook like myself.
But what if the fish came fully seasoned, resting atop a pre-soaked cedar grilling plank and all you had to do is thaw before tossing onto a grill or into an oven?
You’d have no excuses, right?
Cedar Bay Grilling Company offers just that to residents of Canada and the United States: ready-to-cook salmon fillets from the tiny fishing hamlet of Blandford, Nova Scotia straight to your freezer.
The folks at Cedar Bay graciously sent me packages of each of their full salmon fillets: Applewood with Orange & Ginger (featured in this recipe) and Sugar & Spice, which I can’t wait to experiment with soon.
If I’m being 100% honest, this entire meal comes together with minimal effort; not only is the salmon ready to go, but frozen, packaged cauliflower rice works perfectly here.
Sure, you could use the food processor grater to “rice” a fresh head of cauliflower, but why make things difficult?
With an assortment of fresh herbs from your backyard garden (or produce section, if your thumb isn’t so green) and pantry staples like garlic, dried ginger, olive oil, and lime juice, you can create your own light, yet satisfying, dinner in minutes.
Cedar Bay Grilling Plank Salmon with Herbed Cauliflower Rice
Serves 4
Ingredients
- 1 package Cedar Bay Grilling Company Applewood with Orange & Ginger Cedar Planked Atlantic Salmon, thawed
- 1 package frozen cauliflower rice
- 1-2 Tbsp olive oil
- 1-2 limes, juiced
- 1-2 garlic cloves, minced
- ¼ tsp sea salt
- ⅛ tsp black pepper
- ⅓ cup fresh parsley, finely chopped
- ⅓ cup fresh mint, finely chopped
- ⅓ cup fresh purple (or regular) basil, finely chopped
- ¼ tsp ground ginger
Directions
- Preheat oven to 425° F.
- After salmon filet is thawed, unwrap and place the plank directly on the oven’s middle rack. Bake according to package directions—for about 12-15 minutes (or until core temperature reaches 145-158° F).
- Meanwhile, heat a medium size pan over medium. Drizzle olive oil and add cauliflower rice (frozen or thawed, it doesn’t matter).
- While the rice is sautéing, add salt, pepper, minced garlic, ginger, and lime juice.
- Continue cooking until warmed through. Add your chopped mint, basil, and parsley to the mix. If necessary, adjust flavor by adding a pinch more salt or other seasonings and continue to warm, just enough for the herbs to release their flavor without wilting.
- To serve, scoop a portion of cauliflower rice onto a plate. Top with a slice of salmon fillet, garnish with extra herbs, and enjoy.
The salmon was packed with just the right punch of citrus and spice. While the marinade caramelized beautifully in the oven, the fish itself remained tender and flaky. I imaging this would be even better cooked on the grill.
And once you have this flavorful, herb-filled cauliflower rice, you may not want to go back to the carb-y original version ever again!
