I told you last time that baking is one of my favorite parts of the holiday season, and this recipe was so much fun to create!
Usually my holiday cookie routine consists of “slice, bake, frost” (yes, I’m talking about slice & bake sugar cookies, don’t judge!), but this year, thanks to my lovely embossed rolling pin, I decided to try my hand at something a bit more creative.
I’m not going to lie—my first recipe (for gingerbread) did not turn out. Oh, the cookies themselves were tender, perfectly-spiced, cake-y, and delicious, but thanks to copious amounts of baking powder and baking soda, they were not conducive to embossed design.
Lesson learned.
Before I get into the recipe for these classic holiday shortbread cookies, let’s talk about the gorgeous design of the rolling pin!

Embossed Holiday Shortbread
yields approximately 30 cookies
Ingredients
- 14 Tbsp unsalted butter, softened
- 1 cup powdered sugar
- 1 large egg
- 1 tsp vanilla extract
- 3 ½ cups all purpose flour
- optional: red & green sprinkles
Directions
- In a medium bowl, whip butter until smooth
- Add powdered sugar, and mix till combined
- Mix in the egg and vanilla extract
- Add the flour until just combined
- If using them, mix in ¼ (or so) sprinkles
- Knead the dough with your hands, wrap in plastic wrap, and refrigerate for at least 1 hour
- Gently roll out half of the dough on a lightly floured surface with a smooth rolling pin to ¼” thickness
- Carefully roll over the dough once with the embossed pin (I found it worked well when lightly dusted with flour), pressing firmly and evenly, rolling slowly
- Cut out shapes (and repeat the rolling process as necessary) and transfer to a parchment-lined baking sheet; bake at 375° Fahrenheit for 8-10 minutes until edges are slightly golden
These fun cookies are perfect for dunking in coffee, hot tea, or hot cocoa, since they are lightly sweet and sturdy.
