This colorful, fragrant, spicy shrimp udon bowl with mushroom and cabbage is just the dish to spice up your weeknight dinner rotation. Featuring Fortune Udon Noodles, it comes together quickly and easily.
Fairly often, my husband and I find ourselves in a weeknight dinner rut.
Breakfast for dinner happens occasionally. Tacos or quesadillas are a regular favorite. And we often take advantage of our slow-cooker and our deep freeze for easy meals like soup, “pulled” pork, etc.
And, yet, we still find ourselves eating a lot of the same things.
Recently I was invited to participate in the JSL Fortune Udon Noodle Blogger Recipe Challenge and received a selection of all 3 udon noodle flavors: original shoyu, mushroom (vegan), and chicken.
Who doesn’t enjoy noodles?
Fortune udon noodles contain minimal ingredients, and they come together as a meal in just a few minutes.
In an effort to gussy up the noodles and bulk up the meal with some protein and extra vegetables, I decided to sauté some subtly spiced shrimp, carrots, red cabbage, and shitake mushrooms.
With a rich, spicy, and embarrassingly easy broth, the udon bowl came together perfectly.
Spicy Shrimp Udon Bowl with Mushrooms & Cabbage
serves 4
Ingredients
- 3 carrots, peeled & thinly sliced
- 2 scallions, chopped
- ½ small head of red cabbage, thinly sliced
- 4-5 oz sliced shitake mushrooms
- 16 large shrimp, peeled & deveined, tales on
For the marinade:
- 1 Tbsp olive oil
- 1 Tbsp soy sauce
- 1 Tbsp rice wine vinegar
- 3 tsp gochujang paste
- 2 cloves minced garlic
- 1 tsp ground ginger
- juice of half a lime
For the soup:
- 4 cups chicken (or vegetable) stock, unsalted
- 2 cups water
- 3 tsp gochujang paste
- 3 tsp lime juice
- 1 pack Fortune Udon Original Shoyu
- 2 packs Fortune Udon Mushroom Flavor
Directions
- In a small bowl, combine marinade ingredients over the 16 shrimp; allow to marinade in the refrigerator for no more than 20 minutes (or the acid will begin to cook the shrimp)
- Meanwhile, heat some olive oil in a nonstick pan
- Add your sliced carrots and sauté until tender
- Next, add your mushrooms and allow them to soften and brown
- Lastly, add your sliced cabbage and cook until tender
- Set aside the cooked vegetables
- In the same pan, cook your shrimp; be cautious not to overcook (a few minutes on each side should be enough)
- In a stockpot or dutch oven, add your stock, water, gochujang paste, lime juice, and seasoning packets that come with the noodles
- Once it begins to boil, turn the heat to low; allow the broth to reduce slightly until it becomes a rich color
- Once ready to eat, add the udon noodles into the broth and cook according to package directions (just a few minutes to heat through)
- To serve, place noodles into a bowl; top with mixed vegetables and shrimp (4 per serving); pour over the broth
- Garnish with chopped scallions
